Ever have one of those days where you’re just CRAVING for some yummy noodles in soup? Well maybe today could be one of those days. Taking inspiration from the Thai Coconut Curry Noodles we’re familiar with and the classical Thai noodle dish Mee Kati, this variation of our Thai Coconut Curry Smart Soup is quick and super easy to whip up.
Traditionally, most Thai curry noodles use coconut milk as a key component. The Mee Kati is also cooked in a creamy coconut milk broth which is then cooked together with minced pork or shrimp, tofu, soy beansprouts, etc. In our Thai Coconut Vermicelli Noodle Soup, we’re actually substituting out the rich coconut milk and instead putting in our Thai Coconut Curry Smart Soup as the soup base.
Although the coconut milk is flavourful, it is also high in fats and calories. By using our Thai Coconut Curry Smart Soup, we can still mimic the typical curry noodles but it would be lower in calories and fats due to the use of coconut water. Coconut water has numerous health benefits that range from boosting hydration, reducing blood pressure to preventing indigestion.
