What better way to celebrate the last day of the 7 days of Smart Soup campaign with this homemade recipe? Stick around and see how we take this classic holiday recipe and put our own spin to it! Presenting the Moroccan Chick Pea Beef Stew :)

Read about our Indian Bean Masala Wrap

If you like hearty soups, then you will absolutely love our Moroccan Chick Pea Smart Soup. This sweet and savory soup has the perfect balance of chickpeas, vegetables, raisins and authentic North African spices, making this soup irresistible served on its own. Since the holidays are just around the corner, we revisited some of our favourite holiday recipes, and stumbled upon the classic beef stew.

In a small pan, cook the beef with heated butter or oil over medium heat until it is seared and browned on both sides. In a separate pot, Heat up a pack or two of the Moroccan Chick Pea Smart Soup and add the cooked beef briskets in once the soup starts boiling. Bring the entire pot to a boil and reduce the heat as you slowly stir and simmer the ingredients for about 30 minutes to an hour. The raisins in the Moroccan Chick Pea Smart Soup should act as natural sugar in the stew so you shouldn’t have to add extra seasoning. Serve it up in a large bowl and it’s ready for the Christmas dinner table. Merry Christmas and hope you enjoy our 7 days of Smart Soup recipes!

Needing a quick and easy appetizer for that holiday pot luck you forgot about? Here is a protein-rich recipe that is super simple to whip up. Inspired by the classic bean burritos and na’an bread wraps, try putting together this Indian Bean Masala Wrap recipe!

Read about our Vietnamese Carrot Lemongrass Risotto

Using mung beans as the key ingredient, our Indian Bean Masala Smart Soup is packed with vegetables that are simmered in a rich, exotic tomato broth. Though our line of Smart Soups are all vegan and gluten free, beans actually pair really nicely with beef and/or chicken. In this specific recipe, we used beef briskets to bulk up the ingredients in this tortilla wrap.

Before piling in the ingredients, heat up some butter and sear that tortilla wrap until it is a bit crispy and golden brown. To make the wrap filling, combine the ingredients from the Indian Bean Masala Smart Soup and add in our lightly seasoned beef briskets. Cut up some fresh lettuce and add it in the wrap for more bite. To seal all the ingredients together, sprinkle some shredded cheese before wrapping it up. That’s it! Super quick and delicious recipe you can easily put together before any party. Enjoy!

If you’re a fan of the sweet, creamy flavours in a butternut squash risotto, you’ll definitely want to try this recipe out! Best served as a side dish or as a main entrée, this redefined Vietnamese Carrot Lemongrass Risotto will be the star of your holiday meals.

Our Vietnamese Carrot Lemongrass Smart Soup is often praised to resemble a butternut squash soup. This lively puree of carrots and Asian vegetables is infused with aromatic lemongrass, curry spices and coconut water making this Smart Soup one of our all-star favourites. Taking note of its consistency being very similar to a classic butternut squash soup, we decided to replicate the recipe of a butternut squash risotto but instead, replacing the butternut squash base with our vegan, gluten free Vietnamese Carrot Lemongrass Smart Soup.

In order to control the texture of the Arborio rice, we cooked the rice and soup separately. We added Parmesan cheese in the softened rice to give the risotto a creamy consistency. This recipe does require a bit of attention as you have to continue stirring the rice as you add the soup in a little bit at a time. When you see that the rice has been coated with the Vietnamese Carrot Lemongrass Smart Soup, add a bit of extra cheese to bond all the ingredients together. There you have it! A delicious Vietnamese Carrot Lemongrass risotto that is perfect for the dinner table.

Looking for a quick and delicious appetizer to satisfy the crowds at a dinner party? Why not give our Santa Fe Corn Chowder Quesadillas a try! Ideally served with a couple fresh dipping sauces – or by itself, this cheesy appetizer will definitely be a crowd favourite.

The Santa Fe Corn Chowder Smart Soup is packed with black beans, sweet corns and is flavoured with various southwest spices. As we have mentioned before, corn provides a rich source of fiber, vitamins A, B, E, iron and other essential nutritive minerals. With the addition of black bean, which is also high in finer and contains phytonutrient content, this Santa Fe Corn Chowder Quesadilla dish will be perfect for those needing an extra protein kick!

We heated up this classic New Mexican soup and dried up most of the liquids before putting it in a tortilla wrap. Sear the tortilla wrap in a pan with some butter to add some flavour and crunch. Top it off with a dollop of sour cream and salsa (guacamole if you have any lying around ;)) and it’s ready to be served up! This zesty fusion is perfect to serve as a dip for nachos or in this case, as the filling for quesadillas. Enjoy :)

One more day till the weekend meaning that’s one more day closer to Christmas! As the holiday festivities continue, most people would agree that it’s quite difficult to stick to a “healthy” meal plan. We on the other hand, don’t think it is completely impossible. Take our Greek Minestrone Zucchini Pasta recipe as an example!

Our Greek Minestrone Smart Soup is known to have a combination of cannellini beans, juicy plum tomatoes, carrots and celery, all infused in a homemade vegetable stock. This rustic, hearty soup is flavoured with Mediterranean herbs and spices, making this a perfect minestrone to serve by itself or in this modified recipe.

We used the Greek Minestrone Smart Soup as a pasta base and added some zucchini to give the pasta more flavour and texture. Depending on your preference, spaghetti or penne pasta will work with this dish. Heat the soup up and mix in the cooked penne pasta. To top it off, add some mozzarella and/or parmesan cheese to it. This Mediterranean-style family staple will be a hit at your holiday parties.

Ever have one of those days where you’re just CRAVING for some yummy noodles in soup? Well maybe today could be one of those days. Taking inspiration from the Thai Coconut Curry Noodles we’re familiar with and the classical Thai noodle dish Mee Kati, this variation of our Thai Coconut Curry Smart Soup is quick and super easy to whip up.

Traditionally, most Thai curry noodles use coconut milk as a key component. The Mee Kati is also cooked in a creamy coconut milk broth which is then cooked together with minced pork or shrimp, tofu, soy beansprouts, etc. In our Thai Coconut Vermicelli Noodle Soup, we’re actually substituting out the rich coconut milk and instead putting in our Thai Coconut Curry Smart Soup as the soup base.

Although the coconut milk is flavourful, it is also high in fats and calories. By using our Thai Coconut Curry Smart Soup, we can still mimic the typical curry noodles but it would be lower in calories and fats due to the use of coconut water. Coconut water has numerous health benefits that range from boosting hydration, reducing blood pressure to preventing indigestion.

Stir fry your shrimp with a bit of minced garlic, cook up some vermicelli noodles and there you have it! A tangy Thai Coconut Vermicelli Noodle Soup with Shrimp that will be perfect for the dining table. Enjoy!

The holidays are near! Over the course of the next 7 weekdays, we’re going to introduce a couple ways where you can change up our healthy Smart Soups to something that can satisfy your festive cravings. It’s time to amp up the protein and get a little creative!

Starting with one of our East Coast favourites, the French Lentil Smart Soup is packed with vegetables and includes all the protein and fiber you need in one meal. Although the French Lentil Smart Soup is a great starter soup, sometimes we want a little more substance, especially around the holidays.

To bulk things up a bit, try adding a cup of quinoa. By adding quinoa into the soup, your protein level goes way up, making this healthy soup more filling. Add a dash of spices (thyme, cumin, red pepper flakes, etc.) to flavour the soup according to your preferences and voilà! You’ve got yourself a nice hearty meal for the cold winter days. Enjoy!
